Cupcakes are single-person cakes. They are baked in molds just like those used for madeleines and muffins. Paper cases are placed inside the mold.
Cupcakes can be confused with muffins and madeleines but they are actually very different.
This sweet emerged in the 19th century. Before the invention of special cupcake molds, they were made in mugs, clay pots or ramekins - hence their name. The other possible origin of the name is the way that the ingredients are measured in cups.
The basic cupcake recipe is the same as any cake recipe: butter, sugar, eggs, raising agent and flour. Most cake recipes can be used and because cupcakes are small they can be made quicker than a normal-sized cake. They are popular for birthdays and other celebrations because they have a striking appearance and can be made with countless different flavours and everyone likes them.
They are normally frosted with a butter cream topping. This is normally applied with a piping bag with a nozzle but it can also be done with a spatula.
Cupcake decorations have now taken a new turn - in addition to frosting, fondant can be used for a more creative effect, including customizing them with figures.
