Madeleine Molds
Madeleines are small traditional cakes from France and Spain of unknown origin. Madeleines are shaped like a small shell, which is obtained by baking them in metal trays with shell-shaped holes. Today they are normally made in small paper cases. Their taste is similar to sponge cake flavoured with lemon.
The recipe ingredients are the same as for cake sponge but the proportions are different: eggs, sugar, butter, wheat flour, raising agent and lemon flavour, usually obtained from the peel. In the traditional French recipe, the egg whites are beaten to stiff peaks to make the dough lighter.
They should not be confused with muffins or cupcakes and Spanish madeleines are different to French madeleines. French madeleines come in different shapes, whereas in Spain they have a similar shape to muffins.
