Sponge cake is made of a type of spongy dough used in confectionery. Its basic ingredients are flour (usually wheat), whole eggs, sugar and salt.
The simplest sponge cake contains the three basic ingredients in identical proportions. It can also include fat, usually butter, but also lard or margarine and more rarely olive oil. Chemical yeast is usually added to gasify it and give it volume. Sponge cake sometimes has liquids in small quantities (especially milk but also spirits).
The other ingredients are used to provide its distinctive flavour - e.g. lemon zest, ground almond, cocoa, grated coconut etc.
Not all baked sweet doughs that expand due to the action of yeast (buns, roscon de reyes, panettone, etc.) are considered sponge cake.
