Cocotte
A cocotte is a pot or marmite used for boiling, stews, pot roasts...the cocotte pot can also be put in the oven. This cooking pot has been originally made in clay, then varnished, or in porcelain with its two side handles (oven-proof). But currently this beautiful cocotte pot is more commonly made in cast iron and aluminum, in both cases providing homogeneous heat diffusion. Cast iron is one of the best cooking materials. Cooking in a cocotte allows you to absorb heat slowly and uniformly, and maintain it for a long time. Cocotte pots are perfect for individual presentations in appetizers, entrées or desserts. Here are some tips for Cocotte cooking:
It is not recommended to put Cocotte pots on already hot hobs as this may damage the ceramic enamel and even crack the iron. When cooking with Cocotte pots on induction hobs, it is best to cook on a low heat at first and then increase the temperature. A sudden change in temperature in the Cocotte pot can also damage it. Before washing, leave the pot to cool at room temperature.
The handles of the Cocotte pot can severely burn you. Always use oven gloves.
In order to avoid damaging induction or even glass-ceramic hobs, it is best to lift and move the pot rather than slide it.
It is recommended to use silicone, wood or plastic utensils. Do not use metal utensils that can scratch and damage the ceramic.
To clean the pot: Let the pot cool and, if nothing is stuck to it, you just need to wash it with a sponge and normal detergent.
If something is stuck to it and it does not come off with a normal sponge, you just need to let it soak for a few hours or overnight.
We do not advise against using the dishwasher, but don't forget that detergents can be abrasive and may end up damaging the ceramic of our cocottes.
